Butter cupcakes recipes



Hello! How are you today? Here's my favorite butter cupcake recipe. It's extremely moist and I can't get enough of  it. I hope you will take some time out to try this simple, somewhat delicious dessert. You could simply eat it without the topping/frosting on top of it.

Ingredients :
250g butter, softened
210 g (mixed of castor sugar and light brown sugar)
4 medium size eggs
1 tsp vanilla essence
5 tbsp fresh milk
1/2 tsp salt
A pinch of lemon zest
200 g self-raising flour
Semi sweet chocolate chip

Baking Temperature : 170 C
Baking Time : 25-30 minutes

Method :

1. Preheat oven 170 c.
2. Bat well butter and sugar.  Add vanilla essence until mixture is fluffy.
3. Add the eggs alternating with flour. Add the milk, lemon zest and salt, mix until well combined.
4. Spoon batter into cupcakes cups, filling each one about 2/3 full.
5. Bake for 25 to 30 minutes. (Add in chocolate chip after 8 minutes)


Vanilla frosting :
250 gms unsalted butter, softened
6 to 8 cups ising sugar
1/2 cup milk
1 teaspoons vanilla extract

Method :
1. Mix butter and ising sugar (bit by bit).  Beat until smooth and fluffy.
2. Add in milk and vanilla and stir until well blended.

Hawaiian chicken pizza



Hi Guys!  Actually I love to eat pizzas, any type of pizza will do.  I'll make sure I have pizza once a week. I used to go to Pizza Hut and Dominos, but now I have stopped.  I've got this recipe from a friend of mine. Thanks to him, now I can make my own at home, and I know the ingredients are fresh and I can save money by not  paying up to 50 bucks outside!

Maybe some of you are having trouble trying to get fluffy dough. Follow exactly the recipe below and your pizza should turn out fluffier. Then it's up to you to choose your own fillings - tuna, vegetarian, beef or etc. But don't forget the MUST topping ingredient in it - onions, mushroom, olives, green/red cupsicum and tomatoes.  Good luck!


Sauce :
1 1/2 tbsp olive oil
1 tsp chopped garlic
1 cup chopped onion
2 chopped large tomatoes 
2 tbsp tomato puree
A pinch of salt
Italian spice
P/s - If you are too lazy to make sauce, you can use tomato or chili sauce

Method :

1. On a medium hot frying pan put olive oil and add the chopped garlic and onions. 
2. As soon as the natural sugar in the onions starts to brown on the bottom and edges of the pan, add tomatoes, tomato puree, spices and salt. Let it simmer for 20 to 30 minutes to reduce water content.
3. Pour into blender to make a smooth sauce. Blend for one minute and let it cool down. Set aside.


Topping : Cut into small chunks
Chicken fillet  (Fry with turmeric/black paper)
Big onions
Mayonnaise
Pineapple
Tomato
Green and red capsicum
Olives
Mozarella cheese

Method :
1. In a small bowl mix chicken, mayonnaise and big onions together. 
2. In another bowl mix olive oil, olive, pineapple, tomato, red and green capsicum. Set aside.

Pizza dough :
3 cups flour (sifted)
1 cup luke warm water (45 C) - Use 1/3 of water and mix with yeast and stir hard until you can see bubble comes out on the surface. If bubble didn't comes out, make another mix. Remember it is important to wake up "sleeping" yeast. No bubble means you won't get fluffy dough!
14 gm yeast 
1 tbsp honey
3 tbsp olive oil
1 tsp salt


Baking Temperature : 140 C
Baking Time : 20-25 minutes

Method :

1.  Mixed flour, honey, olive oil and yeast mixture together. Knead dough until well combined. Add the water and knead again until dough is elastic and smooth.
2.  Cover dough with dry clean dish towel and let it prove for 45 minutes.
3.  Take a small dough and pat it into around shape and put onto pizza/baking tray.
4.  Spread sauce evenly on top of your base and add mozarella cheese,  and lastly add in your favourite toppings.
5.  Dough need to rise before it's ready to bake. Let it rise again for 10 minutes.
6.  Bake for 140 C for 20 to 25 minutes.

Simple healthy cooking tips

General cooking

  • When you are cooking think like a chef.
  • Try to vary the meat and vegetables in a dish, so that there is an interesting variety of flavors, textures, and colors.
  • Always use fresh ingredients when possible.
  • Be sure to have everything prepared before you start cooking.

Sauce and seasonning

  • Always use fresh ginger and etc, not powdered.
  • Use brown sugar as a substitute for MSG (Monosodium Glutamate).

Cooking with oil

  • When deep-frying, to tell if the oil is hot enough, simply sprinkle some water in the wok. When the oil sizzles all around it, you can begin adding the foodd and after frying drain on a kitchen paper towel before serving.

Top 10 favorable food in Malaysia


1.  Nasi Lemak - Served in a traditional triangle of rice wrapped in a banana leaf (kind of as a snack) and a meal version served on a plate.  Breakfast made of coconut milk rice served with sambal ikan bilis and slices of hard boil egg and cucumber. Chicken, squid or even beef is added for better satisfaction.

2.  Roti Canai - Resembles local fried pancake which is made from flour, margerine and a bit of evoporated milk which has a wide variety of toppings such as eggs, sardines, banana and anything you can named. Best served with Dhall, curry or even only white sugar.


3.  HainancChicken rice  - Cooked with chicken stock and topped with steamed chicken! The specialty of the dish is the chicken meat where the smoothness and juiciness remains! Dipping the meat into the chillies and ginger.

4.  Mee goreng mamak - This fried noodle dish is sweet and spicy and the noodle used is the fresh yellow noodles.

5.  Char kuey Teow - A type of noodles. Ingredients such as prawns, fishcake slices, cockles, eggs or even Chinese sausage can be found inside. But, the dish varied from one place to another.

6.  Bah kut tey - Originated from the Hokkien word which means herbal soup served with pork. A bowl of white rice is the best companion to it! But, as time went by, now there is also a halal version called ‘Chi Ku Teh’ which replaces the pork with chicken.

7.  Nasi kandar - One of  Penang's specialties. Rice is being served with a wide variety of food from vegetables to meat to seafood or Indian curry.

8.  Banana leaf rice - Banana Leaf Rice is served on banana leaf with dishes like fried fish, fried chicken, vegetables or anything that the consumer likes.  Indian mostly like it vegeterian.

9.  Satay - Marinated chicken, beef and mutton being barbecued over the charcoal. The peanut sauce is a must as companion. Some would also like to be served with onions, cucumbers and even ketupat, a rice cube wrapped with palm leaves.

10.  Nasi Campur - Means mixed rice in Malay.  Favourite Malaysian lunch that is cheap, fast and convenient.  A plate of plain rice and instructed to pile on whatever pre-made dish that suits your liking.  Most people like it topped with various meats, vegetables, peanuts, eggs and fried-shrimp.

Chicken Rendang Recipe (Caramelized chicken curry)



Rendang chicken is more popular in Malaysia, and is actually popular all over the world. CNN International chose rendang as the number one dish of  their World's 50 Most Delicious Food list.

I know most people said rendang originated from Minagkabau ethnic group in Indonesia, but Minagkabau rendang's  rendang is described as West Sumatera caramelized beef curry. While we in Malaysia don't describe rendang as a curry at all! And in fact it's even more popular in Malaysia, fine-dining restaurants, mamak restaurants, street hawkers (cosy Malaysian cafes), you name it  you'll find them every where!

Rendang is often served with ketupat (compressed rice in coconut leaves) and lemang (glutinous rice barbecued in bamboo tubes) but I found that rendang suits vegetarian bukhari rice the most! HEAVEN! Click link for the recipe.



Ingredients :
Item A : Blend
6 red onions or 2 large onions
3 peeps garlic
3 pieces lemongrass
3 cm galangal
3 cm ginger
10-15 dried chilies

Item B :
1 whole medium size chicken, cut into small chunks

Item C :
1/2 cup of korma curry powder/korma paste
1 cup coconut milk
1/2 cup tamarind juice
1/2 cup evaporated milk
2 cup chicken stocks
1 piece turmeric leaf (If you cant find fresh one, use 3/4 tbsp turmeric powder)
7 pieces kaffir lime leaves (If you cant find fresh one, use 1 1/2 tbsp lemon juice)
 1/2 cup Kerisik/coconut paste (grated and fried coconut, then ground in a mortar and pestle until the oil comes out)
1 tbsp brown sugar
1 tsp salt

Method:
1. Pour oil into frying pan, adjust the heat as necessary. Add the Item A, stir well until fragrant.
2. Add korma curry powder, stir well for 5 minutes and add the chicken. Curry may stick and don't let it burn. Stirring about 10 minutes.
3. Pour coconut milk, tamarind juice, evaporated milk and chicken stocks. Leaves and cook for a further 5 minutes or until the curry has thickened.
4. Add in turmeric leaf, kaffir lime lives, kerisik, brown sugar, and salt. Continue stirring for 5 minutes and you are done!

Hazel Eyes (Hazelnut Cookies Recipe)


Well guys the reason  I call these cookies Hazel Eyes is because it has hazelnut in it :). I made this many times already by request. It so simple, if you look at the ingredients you can find them easily in your kitchen and it tastes yummy too.

Ingredients :
120 gm butter
50 gm castor sugar or brown sugar
45 gm ground hazelnut
125 gm all-purpose flour
1/2 tsp vanilla extract

Baking Temperature : 160 C
Baking Time : 20-25 minutes

Method :
1.  Mix well butter and castor sugar till light and pluffy.  Add in vanilla extract.
2.  Mix in ground hazelnut and plain flour.
3.  Make an shape you prefer.  Arrange onto baking tray.
4.  Bake at 160 C for 20 minutes or until slightly brown.

Melts your Heart (Ghee Cookies Recipe)

I baked these cookies 3 days ago for Aunty S and Aunty J.  They like it very much, Aunty S's husband Uncle K keeps complementing on how tasty these cookies were. It diffidently melts in your mouth and melts your heart too! Sorry I don't have a picture. I will remember to snap the next time.

Ingredients :
125g ghee
60g icing sugar
1 egg yolk
1 tsp baking powder
1/4 tsp salt
1/4 tsp vanilla
185 gm plain flour, sifted
Use white egg for glazing

Baking Temperature : 170 C
Baking Time : 15-18 minutes

Method :
1.  Mix well ghee and icing sugar.  Add the egg yolk, baking powder, salt and vanilla.
2.  Fold in sifter flour.
3.  Form into small balls and place onto baking tray.  Use finger to dip a little white egg and press on top of cookies
4.  Bake for 170 C for 15 to 18 minutes or untill lighthly brown.
